Mediterranean Penne Pasta (Serve 4)
Ingredients:
3 cups Penne Pasta (approximately 228g)
1 clove             Garlic, sliced thinly
1/2 Red Capsicum, shredded
1/2 Red Capsicum, shredded
1/2                   Yellow Capsicum, shredded
1 bunch             Endive, chopped (or substitute with other green vegetable)
100g               Buna-Shimeji Mushroom (or any other fresh mushroom)
3 slices Bacon, shredded
3 slices Bacon, shredded
1/2 tsp               Salt
1 tsp                  Sugar
1/2 tsp               Black Ground Pepper
4 - 5 tbsp            Mediterranean Sauce
Direction:
- Cook penne pasta in a large pot of boiling salted water as directed on package. Drain and set aside.
- Heat 2 tbsp olive oil in a pan. Sautee sliced garlic for about 1 minute.
- Add in bacon and cook till a little brown. Then stir in endives, mushroom, red & yellow capsicums and cook for about 2 minutes.
- Season with salt, sugar, black pepper and Mediterranean Sauce. Stir well.
- Add in cooked penne and stir till the sauce is well coated on the pasta.
- Add 2 tbsp of liquid from cooking the pasta into the pan. Stir well and serve.
