Smoky Buffalo Wings

After having their first taste of buffalo wings at Jerry's BBQ & Grill, my children have been pestering me to replicate the dish at home.  The wings serve at Jerry's, though delicious, were a little too spicy for them.  After experimenting with a few recipes, this is by far the tastiest and easiest to prepare.  

The success of this recipe lies in the perfect balance of sweetness and spiciness in the sauce.  The use of paprika in this dish is essential. It gives the smoky flavour without too much heat.  

This is a perfect party food item and definitely a crowd pleaser.  I prepared these for a kid's party a few weeks ago and it was a huge hit.  The children raved about them to their mummy and I was kept very busy sending out the recipe after that.  Try out this extremely economical dish - a big bag of chicken wings (2kg), which costs only about S$9, is enough to feed 8-10 very hungry children!!  Just remember to keep lots of tissue by their side when eating this. 

These smoky buffalo wings are as good as those serve in restaurants. Yummy!



SMOKY BUFFALO WINGS

 

Ingredients: 
 1 kg          Chicken Wings

Marinate:
3 tsp            Onion Powder
2 tsp            Garlic Salt
1/2 tsp         White Pepper
2 tsp            Paprika

BBQ Sauce:
1/4 cup         Ketchup
1/3 cup         'Masterfood' BBQ Sauce
1/2 tbsp        Maggi Chilli Sauce
1/2 tbsp        Thai Chilli Sauce
1 tbsp           Worcestershire Sauce
1 tbsp           Honey
4 tsp             Hoisin Sauce
1/4 tsp          Black Pepper
1/2 tsp          Dried Parsley


Direction:
  1. Rub all marinate ingredients onto chicken wings using your hand.  Chill marinated chicken wings in refrigerator for at least 1 hour.
  2. Line a baking tray with aluminum foil and brush a little oil on it.  Place the chicken wings onto the tray, oil the wings lightly and bake in a pre-heated oven at 200ºC for 10 minutes. 
  3. Turn the wings and lightly oil the wings again.  Return to oven and bake another 10 minutes.
  4. Mix all ingredients for the sauce.  Pour the sauce mixture into a big bowl and toss the chicken wings in it until all the wings are evenly coated with the sauce.
  5. Drain all the oil from the baking tray before putting the wings back onto it.
  6. Bake the wings for another 8 - 10 minutes.  Serve.



Tips:
  • Both chicken wings and drumlets can be used to prepare this dish.  Depending on the preference of your eaters, you could use either cut.
  • I strongly recommend 'MasterFood' BBQ Sauce for this dish. I find other brands a little too sour and overpowering when mixed with the other ingredients.
  • For party, marinate the chicken 1 day ahead.  The wings will be ready just by baking them for 30 minutes in total.  Mess free and fuss free!!
